Tuesday 4/17: Turkey Bacon BLT’s on homemade bread with Sweet Potato Fries

Wednesday 4/18: Skillet Lasagna with a spinach salad ( I varied the recipe slightly but this is the main recipe)

Thursday 4/19: Rubbed and Grilled Pork Loin and Crash Hot Potatoes

Friday 4/20: Leftovers ( this week created ALOT of leftovers)

Thursday: Baked Chicken and Spinach Flautas¬†and Uncle Ben’s Santa Fe Whole Grain Rice Medley

Friday: Walleye and Cheesy Potatoes served with Salad

Saturday: Birthday Party Pizza

 

Meal Plan for 2/27- 3/2 February 27, 2012

So again I have slipped on posting my meal plan.  We had a clean the cupboards and fridge week followed by a week at my in-laws so was a little off. Back at it this week though!

2/27: Meatloaf with mashed potatoes and fresh Mustard Dill Bread

2/28: BBQ Chicken in the Deep Covered Baker with lettuce salad

2/29: Pork Tenderloins with homemade fries

3/1: Bacon Ranch Chicken Pasta with lettuce salad

3/2: Tilapia with corn and Whole Wheat Buns

 

Cheeseburger Soup February 8, 2012

I received this recipe from the Petermann Family and so glad they shared it with me as it is now a favorite!

Ingredients:

1 lb Ground Beef

3/4 cup Diced Onion

3/4 cup Shredded or Chopped Carrots

3/4 cup Diced Celery

1 tsp Dried Basil

1 tsp Dried Parsley Flakes

4 Tbsp Butter/Margarine (divided)

3 cups Chicken Broth

4 cups Diced, Peeled Potatoes ( we didn’t peel them this last time and was good as well)

1/4 cup Flour

8oz Velveeta, cubed

1-1 1/2 cup Milk

3/4 tsp Salt

1/2 tsp Pepper

1/2 cup Sour Cream

Procedure:

1. Brown Ground Beef in Pot

2. Remove beef from pot and in the same pot; saute onion, carrots, celery, basil, and parsley in 1 Tbsp butter until vegetables are tender (Approx 10 min)

3. Add broth, potatoes, and ground beef.

Bring to a boil, reduce heat.

Cover and simmer 10-12 minutes or until potatoes are tender

4. Meanwhile, in a small skillet, melt the remaining butter and add flour and mix.

5. Add to soup and return to a boil.

Cook and Stir for 2 minutes.

Reduce heat to low.

6. Add Velveeta, milk, salt, & pepper.

Cook until cheese melts but DO NOT BOIL

7. Remove from heat and blend in Sour Cream

 

ENJOY!!

Again, I have slipped on posting my meal plan so I’m going to try doing it 2 weeks at a time and see if that helps. ¬†I have been getting a lot of my recipes lately from Pinterest. ¬†The ones I have picked from there will be linked to their sites.

Sunday Feb 19: Jimmy’s Pizza——¬†Ok Jimmy’s/Justy’s fans, mark your calendars…On Sunday February 19th Jimmy’s is going to join up in helping the Ames family raise a little dough (yes, pun intended) for the Juvenile Diabetes Research Foundation—Walk to Cure Diabetes. Reid Ames, son of Chuck and Brooke, and brother of Alex (a Jimmy’s superstar employee) and Jack, was diagnosed with Type 1 diabetes three years ago. They have formed a walk team, Team Reid, to raise money at the Mall of America on February 25th, and Jimmy’s wants to help them to get a nice start. So on the 19th Jimmy’s will donate 20% of all sales that day to Team Reid. Come on down for some great food for a great cause!

To say it has been a while would be an understatement. ¬†Just a fraction of my New Year’s Resolution is better utilize this blog. ¬†Add Meal Plans as well as recipes, other blogs I love, and what is going on in my kitchen. ¬†Here is my Meal Plan for Mon-Sat. ¬†Our fruits and veggies depend on what we’re feeling that day so the chances of everyone eating them increases.¬†

Mon Jan 2: Meatloaf, mashed potatoes

Tues Jan 3: Beer Cheese Soup, biscuits

Wed Jan 4: ¬†My grandma’s Chow Mein Hotdish ( I will post the recipe later in the week)

Thurs Jan 5: Tuna Melts 

Fri Jan 6: Chicken and Rice

Sat Jan 7: Homemade Pizza—Dan’s Choice!

 

** Tip of the week: Prep anything you can earlier in the week. ¬†Tonight while my Meatloaf is in the oven I cut celery and browned hamburger for Wednesday’s hotdish. ¬†Every little bit helps!
